RECIPE: CRUNCHY FRENCH TOAST + Whipped Cream

 

I’m not awake early enough to have breakfast ready for my husband before he heads to work, so he usually grabs a muffin on his way out the door. On his days off; however, we have made a fun tradition of enjoying brunch together.

One of my favorite things to prepare is Crunchy French Toast. Need I say more? Panko crumbs turn this plain old bread into a superstar, offering not only a crispy component but also a nutty flavor that knocks down the sweetness. I love to serve it with homemade whipped cream and sliced strawberries, but it’s delicious with maple syrup and butter, too!

Unlike some of my other go-to breakfast meals, this is as easy as can be. And the best part is that you likely have most of these ingredients already! If you must, you can substitute plain ‘ol milk for heavy cream, but hopefully, you already have it on hand for the whipped cream. Trust me, you won’t be disappointed.

 


 

Ingredients for batter:

4 eggs

½ cup whipping cream

1 teaspoon vanilla

2 tablespoons sugar

¼ teaspoon ground nutmeg

1 teaspoon ground cinnamon

 


 

Ingredients for toast:

8 slices Texas toast

1 stick of butter

1 cup panko crumbs

½ teaspoon ground cinnamon

2 tablespoons sugar

¼ teaspoon ground nutmeg

In a separate shallow dish, mix the crumbs, cinnamon, nutmeg and sugar. Melt a stick of butter in a skillet over medium-high heat.

Dunk the bread in the batter, allowing the excess to drip off before pressing it into the crumbs. Cook each side of the bread until golden brown.

In a large mixing bowl, add a cup or so of heavy whipping cream and as much sugar as your little heart desires. Use a whisk or a hand mixer and beat until the cream is thick and reaches firm peaks. Taste as you go to get the desired amount of sweetness. Enjoy!
